One problem, though: part of the appeal of sexual stories is the naughtiness of them; the sense of doing something that you know you shouldn't be doing. But in a post-apocalyptic world, where all conventions are blown to hell and all the rules are out the window, that certain naughtiness is pretty much gone! Anything goes!
While law enforcement may be out the window, there's still right and wrong. The main character may have to face a moral dilemma. What if the only survivors were him and his mom? Him and his daughter? What if he spends months, or years, thinking he's the last man on earth when *finally* he finds another human being -- a beautiful woman! But she's a nun, and she's adamant about keeping her vows.
In any of these situations, would he force her to have sex? Would it be wrong for him to harass her and pressure her into sex? Would he extort her into sex by withholding food, protection, conversation?
There's a lot you could do with this.
