Ok, so it's like 4 days after Turkey Day

Your fridge is still loaded with turkey, mashed potatoes, a picked over veggie tray.

How do you turn this Thanksgiving wasteland into something yummy and exciting. I have a few thoughts on the subject - and please interject your own ideas.

My boyfriend shredded a bunch of turkey and added green chili, enchilada sauce, sour cream, shredded cheese and salsa verde and mixed it all up. Then we froze the mixture into two tupperwares. Next month on a hectic night, all we have to do is thaw out one of said tupperwares, procure some cheddar and tortillas and a fantastic dinner appears.

Tonight I invented my own version of Turky A'la King. I think mine is tasier and less traditional. It even has fresh scallions in it: Viola:

Turkey Ala King

3 tbls butter
3 ribs diced celery (you know you have a crapload of celery leftover from T-Day preperation)
Garlic salt and pepper to taste
2 cups milk
1 cup sour cream
1 small jar chopped pimientos
1 tbls chicken base (you will have this crap leftover from the gravy making no doubt)
2 cups finely chopped turkey (or chicken)
1 cup diced scallions (I used the ones left over from the crudite tray – nobody eats them anyway)
Tbl paprika
Tbl cayenne pepper

1) For sauce, melt butter in large saucepan
2) Sautee celery until it begins to become soft and fragrant
3) Add the milk, sour cream and chicken base. Stir thoroughly to incorporate base.
4) Cook and stir over medium heat until thick and bubbly.
5) Stir in the turky and pimientos
6) Continue to stir until the sauce is nice and bubbly.
7) Serve over those left over mashed taters

Any other creative ideas to turn those left-over Thanksgiving blahs into something fun and tasty??
 
Currently my fridge is loaded with crab fettucini alfredo, homemade pizzas and lots of baked goods.

But I'm very thankful.

I wish. My entire fridge contains two bottles of coke, some good expensive blue cheese and a sub sandwich. Some basic condiments. I like to travel lite.
 
Lezilla Thighs Ala King

3 tbls butter
2 Lezilla Thighs

1) For lubrication, rub butter generously over thighs
2) Spread thighs widely and add self between the thighs
3) Enjoy!

Something with brown sugar
 
This ham is glazed with a combination of maple syrup and apple juice, along with a little mustard and brown sugar.

INGREDIENTS:

1 fully cooked ham, about 6 to 8 pounds
1/2 cup pure maple syrup
1/2 cup brown sugar
1/2 cup apple juice
1 heaping tbl Dijon mustard
dash cinnamon and ginger

PREPARATION:
Place ham, fat side up, on rack in a foil-lined roasting pan; score fat and stud with cloves, if desired. Cook at 325° for about 18 minutes per pound, until meat thermometer or instant read thermometer registers 148°.

Combine glaze ingredients in saucepan; bring to a boil and boil for about 2 minutes (be careful not to let it boil over). About 20 minutes before the ham is done, spoon about half of the glaze over top of ham, then about 10 minutes before done, spread remaining glaze over ham.


Sound about what you're looking for?
 
tent the ham with foil for the first half of the baking so that it doesnt brown too much...then remove the foil for the last 1/2-1 hr depending on the size...then the glaze will do its thing.

I don't have a recipe handy, but those mashed potatos are one of the ingredients in Potato Pancakes. Basically it's about three measures of regular pancake batter to one measure of mashed potatoes; blend well then cook and serve as youwould any other Pancakes

Hey, I made sweet potato pancakes for the clan post T-day morning. I just made up a batch of bisquick batter, mashed in some sweet taters, added a bit of milk to make up for the added bulk and dryness and they turned out fantastical.

We had sweet potato soup on Sunday.......Love the vitamix.
