This is my recipe for Beef Florentine. (Pinwheels)
All of this is by eye so bear along with me.
You will need.
One Skirt Steak
Mozzarela Cheese
Garlic, either minced or powdered
Several strips of bacon cooked soft
Spinach (I use frozen chopped but you can use fresh)
Place the skirt steak on your cutting board and beat the living hell out of it with a meat tenderizer. Thin it out as much as you can without tearing it to pieces.
When you have finished this sprinkle liberaly with the Garlic, Salt and Pepper.
Put down a thin layer of onion
put down a thin layer of the Spinach
Lay the Bacon across the meat
Put down a thin layer of cheese
Now comes the hard part. Starting at one end roll tightly. Tie with Butchers Twine. Once you have one twine around the middle you can take a little break and take a breather. When you are again ready you tie the roll every two inches along the length of the roll.
Season the outside of the roll with more Garlic, Salt and Pepper.
Place this roll on a Cookie Sheet. Place this in an oven preheated to 350°F and cook until internal temperature reaches 165°F.
When it is done let it sit for five minutes then cut between the twines. Serve.
