Strolling through the local grocery store I stopped and stared. They had slabs of bacon on sale in the cooler. And yet we're not just talking slabs of bacon, we're talking slabs of Dry Cured Bacon.

Oh man we're talking the kind of bacon my father and I used to pack along when we went camping out in the middle of no-where. These were packed the way they used to be packed, in Burlap.

I asked the guy behind the counter how much it was and for how long they would be selling it. He told me the price and that they would be carrying it for the next couple of months.

My wife gave me a dirty look when I grabbed a slab. She gave me an even dirtier look when we hit the checkout lane and she saw how much it cost.

When we got home she looked on in horror as I unwrapped it. She could see the faint hint of mold on the outside. She watched as I sliced off several chunks and rinsed them before tossing them in the fry pan.

Oh the memories the flavors brought back. One can never imagine just how good this stuff tastes unless you have had it. My wife was a bit hesitant at first, then she tasted it and dug right in.

I have the feeling that tomorrow I'll be buying several more slabs.

Has anyone else here had the absolute pleasure of eating this kind of Bacon?

What kind of memories do certain kinds of foods bring back for you?

The mold reminds me of a Country Ham here in NC :D

I stayed in Marrieta GA for a half a year, and was soo hooked on Smithfield Dry-cured hams!

here's a pasta recipe for you, cat;

Cook your choice of pasta, I like Spaggetti Rigatti, or Linguini, but my Old man likes angel hair. Slice up some Broccoli heads off their stems, into small florets, and throw them into the boiling pasta water about two minutes before the pasta is done, and then drain the stuff.

In a BIG pan put equal amounts of Olive oil and Butter; be generous because that's all the sauce you'll have. Chop up garlic, (coarse) and saute that along with some chili flakes or fresh chili chopped if you want. Toss in some nuts; I've used Pine Nuts, Walnuts, and pecans depending on what was available. let them cook for a minute.

Then toss in some of your bacon, julienned or tiny dice, stir a bare moment, and get it off the heat. throw your drained spagetti plus broccoli into the big pan, stir and toss to coat the pasta with the oil and get the bits tangled up in the spagetti strands. Slop it out onto everyone's plates. get out of the way of their forks.

Fussy children love this; meat eaters who hate broccoli love this; Dainty Southern Belles who eat like birds disgrace themselves on this dish. :D
