In work today we decided to order out. Of course I wasn't asked about my preferences about where we were ordering from. It ended up that we were ordering from a newly opened local place that one of the R.N.'s had tried.
I wasn't allowed to order, the R.N. who had chosen the place informed me that she was buying me lunch.
When the food arrived I was a bit surprised to find not one but two good sized sandwiches with my name on them as well as a bowl of soup. The R.N. informed me the second sandwich was for my wife.
After I delivered the sandwich to my wife I was instructed to sit down and try the soup. I opened the container and inhaled the lovely aroma of a French Onion Soup. I looked at the R.N. in surprise and she told me to try it. (We have often talked about some of my favorite foods so she knows one of my favorite soups is a properly prepared Onion Soup.)
I picked up the spoon and gingerly broke the crust on the melted cheese. I dipped out some of the soup and gave it a slow taste.
Oh my, talk about heaven. This was an onion soup like none I have tasted in many years. I could taste traces of Thyme and Rosemary. It was obviouse they had used not Red Wine but Cognac. The Onions had been slow carmelized until they were almost liquid. The soup itself had been slow cooked so all flavors were well mixed. The bread on top was freshly toasted Baquet and the cheese was a mix and nicely toasted.
I'll be going back there for more.
