* Steamed mussels at Mona Lisa in Bonaire, served in a cast iron dutch oven with the steam smelling of white wine and herbs and served with crusty french bread
* Cracked conch, fished minutes before and prepared on the beach by Shelby the fisherman on Little Cayman
* Beef bourguignon, made by myself...cooked for hours and served with rich red wine and roasted baby potatoes
