I just finished making one of my favorite recipes for a friends Memorial Day party tomorrow, and I just thought I’d share.

White Chocolate Cheese Cake
Ingredients:
12 oz. chocolate gram crackers [I use 10 oz gram crackers and 4 oz. crumbled semi-sweet chocolate]
1-¾ sticks of butter
16 oz. White chocolate
32 oz. Cream cheese [I use 16 oz. regular and 16 oz. low fat]
½ cup of sugar
4 large eggs
2 Tbs. Vanilla extract

-Crumble gram crackers [and chocolate mixture: optional]; mix with ¾ stick of melted butter and press into the bottom and sides of a 10” by 2 ½” spring form pan.
-Preheat oven to 350.
-Bake crust for 5-8 minutes and remove from oven.
-Lower heat to 250.

-Melt white chocolate in a double boiler over medium heat. [Fill a pan 1/3 to ½ way up with water and put it on the burner. Place white chocolate in a heat conductive bowl (i.e. metal or Pyrex). Rest the bottom of the bowl in the water to melt chocolate]
-Beat cream cheese and remaining (1 stick of) butter till smooth.
-Add in other ingredients and beat till smooth.
-Add white chocolate mixture to crust and bake (at 250) for one hour.
-After one hour turn off heat and leave in oven for one additional hour without opening the oven door.
-Remove from oven and let cool.

I decided that it didn’t have enough calories, or chocolate, so I added some crushed Oreo cookies as a filling between two layers of the white chocolate mixture. Enjoy! :D

i made banana spooge today ... i didnt even know if i liked it but wanted too make it because we had a load of over ripe bananas and thought be better to make something with them then chuck them away
