My mom knows I like Mexican food so she’s met me for dinner at a few over the years.

I will absolutely tell her if I won’t be eating at that restaurant again.

Egg white omelette with salsa.

I’ll admit, I didn’t get the first take when I slid the omelette out of the pan and tried again. Messed it up, but kept the imperfection anyway

Oh I did! The omelette just looks a little …..insipid. I like my omelettes eggy and loaded with bacon, cheddar cheese, mushrooms, tomatoes and herbs. Calorific so to speak.

Well, my fridge is a little empty. And full of only vegetarian options. It’s been an odd few weeks and I just haven’t been able to go shopping easy.

But I do enjoy a mushroom and shallot omelette most. Need mushrooms. And shallots.
