Well, Not everyone who eats these products are vegetarians. Many people suppliment their diet with them, to cut down on meat consumption.
I can't say what is going through the mind of the manufacturer. Morningstar Farms was bought out by Kellog, and I doubt that they have a team of Vegetarians running the show.
For many, it could very well be, that the only way they can maintain being veg, is to have direct replacement of products they grew up with, to satisfy their cravings.
If they had been, like most people are, addicted to fast food, they may not have the will power to stick with it, if they don't eat these 'burgers'.
I adressed the issue of convieniance, above.
Here is another possible reason. If a person is a new vegetarian, who is wanting to not eat meat for health reasons or they are now against industrial practices... or what not... They may have trouble getting all of the nutrients they need, if they don't have the culinary know how to feed themselves nutriciously.
Oh, and some people don't want to eat meat, but aren't big fans of hunks of vegitables. Others don't like tofu, but love animals too much to eat them.
Little side story to help eximplify...
Last night I had a couple over for dinner. They are my dearest friends here and they are both vegetarian. He cooks and when he cooks, they eat vegi food. She can't nor cares to cook. Due to the fact that she works days and he works nights, she eats out of a box.... Vegi burgers, Chick patties, chick nuggets... etc.
I remember how sickly she'd get, living off a vegitable sandwich each night, before these products hit the market. She'd have to spend 20 bucks for a little thing of vegitarian protien drink powder, just to get by. That is financially not possible for some folk, and it isn't nearly as yummy.
So, the reasons for each person are different, you see?
Side point- Vegitarianism has become a fad among young people. I don't know if they will stick with it because in their hearts they know it is right for them, or if they do it because it looks cool. I personally find the latter reason, as sickening as choking on a hunk of flesh. Non the less, how are these kids (fad related ones) going to go from burger king to vegi king, if they don't have a replacement, to consume?
Oh and no offense to anyone, especially Willing and Unsure, whom I don't want to think I am picking on her cause she said semi vegitarian,
and I know that is a common thing people say but you can't partially be a vegitarian. Either you are, or you are not. There is nothing wrong with not being a vegitarian.
Requirements of classification... All animals, including humans, and if you come at me with that shit about humans not being animals, I will just ignore you.
Carnivors- eat only meat. No vegitation of any sorts. Very rare, even in the wild.
Omnivors- eat both meats and vegitation. Most of you, even the ones who claim to be carnivors, are this. Even dogs, like Scruffy, are omnivors.
Vegitarians- eat no meat products, including gelatin, broths, or dirivitives such as rennet, which is an enzyme derived from ground up cow stomach (found in many/most cheeses). Vegitarians may eat animal by-products such as eggs and milk, even honey, but they are then termed Lacto/ovo or lacto or ovo Vegetarians.
Vegans/ Herbivores- eat or use no animal, or animal by-products, including honey. Truely herbivorous. Very rare, but more common than true carnivors.

Before I continue, I just want you to know, that I can't eat half of the vegetarian products that they make for health reasons, but I can see why they make them... And I want you to know that although I am of a stern tone here, I am not offended really, or even phased. I just think that there are points you need to consider, before you ask such subjective questions.
First of all, your question assumes that all vegetarians are against meat eating. This is plainly not true. I for one, have nothing against meat eating. I am of the belief that a "You shoot it, scrape it, eat it" policy is a decent one, although I don't hunt. I am saving that up for when the next ice age hits.My issues lie in more significant areas, than "meat: oh it's yucky."...... You know....immoral rearing of animals for the production of meat, Ag animals being nightmares to ecology... and so on..... I just thought you should know where I am coming from with my beliefs as an example that not all vegitarians are anti meat.
On the matter of consumption of these products....
If a person who works 12 hour days, but doesn't want to eat meat, goes home and pops a 'vegi burger' into the oven, does that make them a hypocrite? No, it just means that they didn't have time to hand chop a bunch of vegies and cook up a big meal, for one person. The issue of convieniance is as important to vegetarians as it is to meat eaters.
I have to cook everything I eat, from scratch. This is a major pain in the ass. Most people don't have time. I know I don't, but I have no choice. Your theory makes it out like I am a hypocrite too....
Does this mean I can't make Sweet and Sour Tofu anymore. I mean the recipie is Sweet and Sour Chicken to a tee, the tofu is even breaded in homemade tempura? If I put soy crumbles in my pasta sauce for added protien, does that mean I might as well be eating meat? Last I checked, my feeding myself isn't a social statement. I am simply feeding myself.
If that's the case, then why make it look like fur? If you don't know it's fake, you would assume they were wearing the real thing. Doesn't that defeat your whole purpose?
I will say that the logic you express here is a bit cloudy, but you may have a point.
