I love to go and pick out meat. There are two in town, with piles and piles of meat. If I act cute and dumb I always get extra attention. Just finished making a couple 2" boneless pork chops, 12 hour Jamaican brine with a flash sear and high temp bake. I'm open to any and all stories concerning meat.

Flash sear followed by a high temp bake on a 2" boneless pork chop would make the outside burnt while the inside would be raw.

Pork is boring.
I ate camel the other day. That was good. I've also had crocodile and emu. Oh and kangaroo, but you can get that anywhere these days. Emu is awesome! It has a beefy flavour with the texture of chicken.

I had some horse in a Mongolian restaurant in Europe. It doesn't taste like chicken.
