Is it taking anyone else a week for their story to go from Pending to a Published?

It can, especially when it is your first one, it can take some time to be approved. Only thing to do is be patient.
Once you publish a few and don't have things sent back for violations, it goes quicker.

Understood. Stay within the rules and they get approved quicker. I had one go live this morning after pending for like 2 days, and I've only submitted a handful of stories.

Understood. I think it might be because I used “special formatting” (i.e. italics) so maybe that makes it take significantly longer to go live

Italics should not slow you down. One week is not all that long a delay, truly, for a first shot. Patience, Grasshopper - and do let us know when it goes up. Good luck.
