I don't think that's a lesbian thing, I think that's just a preferance thing. Unfortunately, it's not uncommon. So many people have huge hang-ups about anal. Personally I'm like you, Love it, love it, love it. Beg for it quite frequently. Don't really think that I can live without it for long. Wait, where was I? Oh yeah, sorry about that
Um, so, the most obvious solution first, have you tried talking to her about it? Communication is so key when it comes to sex, otherwise one or both of you end frequently can end up either only partially satisfied or completely unsatisfied and if you're not talking about it not even know there's a problem until it becomes a big issue.
You may have to deal with not being able to get anywhere near her ass. I know, totally sucks, you know how good it feels and want to share that with her, but if she's completely closed to it, there isn't much you can do.
The suggestions that I can make to help you help her be less closed to playing with you. Usually, anti-anal issues stem atleast in part from fear of the possibility of the mess. Make sure you are fresh from the shower and consider introducing gloves. (I prefer the purple nitrile they tend to be less irritating than laytex, but they can sometimes be a little hard to find) of course all of this would be after a discussion with her and bringing the possibilities up with her. Now, if you're talking rimming, chances are, if she's currently this against anal, you're gonna have a long uphill battle to change her view there.

It is indeed a personal preference rather than part of being a lesbian. She may be misinformed about anal sex - pretty much all of us are raised to believe it's dirty and unsafe back there - or she may indeed have tried it in the past and already knows it's not her thing.
Does she know how important anal sex is to you? If not, you should talk with her about it. If she does and still refuses, try to find out if it's misinformation/ignorance that causes her fear. (If it's previous bad experiences, you're probably out of luck.) If it is ignorance...teach her! As an anal aficionado yourself I'm sure you know many of the more important facts about it.
