Leftover Turkey: Recipes?

In honor of FallingtoFly and her 20lb mostly-uneaten bird (Present cooking mitts. Everyone salute!)....

Favorite recipes for leftover turkey?

My fave:
Turkey Tetrazzini

3 cups cubed turkey
1/2-3/4 pound pasta, cooked according to package directions

1/2 cup (8 T) butter
1/2 cup chopped onion
1/2 pound mushrooms, sliced
Stalk celery sliced
1/4 cup flour
1 T powdered chicken bullion
2 cups chicken broth
1 cup whipping cream
2 T dry sherry

3/4 cup breadcrumbs
1/3 cup parmesan

Prepare pasta and place in large bowl. Mix in turkey. Grease a 13 x 9 x 2-inch baking pan.

Using 4 T (1/4 cup) butter, saute mushrooms, onion and celery. Melt in remaining butter, add flour and seasoning (pepper, bullion and, if desired, a dash of nutmeg). Mix till smooth. Add both and cream. Cook till smooth and thick (about 5 minutes).

Add sherry and fold into pasta and turkey. Turn into the buttered dish.

Mix crumbs and cheese, sprinkle on top and bake @ 350 for 30 minutes.

Yum.
 
Hot Browns

Make toast.. put it at the bottom of a casserole dish, then put turkey on it and cover it with seasoned cream sauce and put shredded gruyere cheese on top. Bake till hot through.. brown top under broiler. mmmm

LOL! That's the one I was gonna offer - Turkey Tetrazinni! Almost as much of a tradition as the Thanksgiving meal itself. :D

It is a great leftover dish!
 
I might use the shredded leftover chicken (Yes, chicken. Blasphemy! :D ) for omelettes.
 
Turkey Soup:

Use a large pot and drop in the turkey carcas. leave some of the meat on it and let it simmer for a few hours with one large onion, cut in half. remove bones.
add veggies to your liking.
potatoes, carrots, peas, green beans...ect. i toss in barley or rice and then use a bit more turkey meat. some times, the broth won't be 'tasty' enough so i'll add *gasp* chicken broth...rare but sometimes needed.


Turkey Curry:
cubed turkey meat
6 slices of thick bread
butter
broccoli
curry powder
cream of mushroom soup
rice

make double serving of rice, i like jasmine for this dish.

in a large bowl, mix soup with curry(a little or a lot up to you) and milk.
add turkey meat and broccoli. let sit.

in a large baking dish, spread the rice. evenly pour the curry mixture over it.

melt butter. dip cubed bread into butter and place on top of curry/turkey/broccoli mixture.

bake for 30 min at 350 and then broil the top so the bread crisps and browns.
 
2:00 a.m. snack after sex -

Thick slice of turkey
Thick slice of sharp cheddar
Leftover dinner roll

Mmmmm.

(I have a terrific Mexican recipe - I'll find it and post it later. This is the stage of leftover turkey we will be at for a day or so, however.) ;)
 
The only way I really like turkey is in a sandwich with cranberry sauce and sage and onion stuffing :D
 
Bwahahaha!!! I hadn't even thought of leftovers yet- still recovering from teh trauma of yesterday.

One of my kids' favorite dishes (And we make it with tuna, chicken, crab meat, shrimp, turkey- anythign but pork or beef) is "Fish'N Worms"

a cup of two of cubed turkey (or chicken, or a package of shrimp or crab meat, a can of tuna)
1 lb. tri-colored rotini, cooked and drained
half-cup (maybe a little more for turkey or chicken) Miracle Whip
frozen peas, half a cup or so
seasoning to taste

mix it all together and serve warm or refrigerated.
 
Turkey Croquettes

Mashed potatoes
Turkey
Green onions
2 eggs
Corn Flakes
*Add salt or bullion cubes as necessary*

Fry in a skillet. Makes a great medium-sized treat.
