The recipe doesn't specify but you need medium rye flour. That's hard to find in this area. Only one store sells it and it's bulk. If you've never made rye bread before, realize that rye dough should be very light and sticky. The first time I made this I used the minimum amount of flour. Bread tasted great but was dense and heavy. Next time I used a scant 3 cups of AP flour. I used as little as possible on the bench for kneading. I make this for my Swedish friend. She loves it!
