Kalamata Olives

This summer I've discovered Greek olives. We have a little market here that sells a lot of imported food (it's a very diverse neighborhood). It's run by Greeks, and their deli has an olive section--maybe 8 or 10 types of imported Greek olives: green, black, in brine, or vinaigrette, or oil. I've become addicted to the big Kalamata olives, which are kind of like the national food of Greece. They're meaty and juicy, and they have this wonderfully complex taste--salty to be sure, but also tart and rich and buttery and very olive-y.

I had no idea olives could be so satisfying and profound, so very soulful. You bite into the things and the flesh just kind of falls off the pit and floods your mouth with flavors that are easily as complex as any good wine or quality cheese, tart and salty and meaty with slight musky and mushroomy notes and an undertone of wine.

It's gotten hot here lately, so for lunch I'll sometimes go get a chunk of good feta cheese, slice up a tomato, and eat that with a bunch of olives and a few Greek peppers and a chunk of Greek bread. It's light and simple and the contrast of textures--the meaty olives with the creamy cheese, crunchy peppers, and juicy tomato--are enough to make me kind of grunt with atavistic pleasure as I eat. Plus you get that salt you want when you're sweating a lot.

I love sex, God knows. But sometimes the quiet, satisfying pleasure of really good, really simple food is very hard to beat.

Aren't they the best? My husband is part Greek and turned me on to kalamata olives... before that, I was strictly a plain-black and green-pimento girl. So white bread. Kalamata olives are like the bdsm of the olive world... dark and rich and pungent.

I've been living on Greek salad too, ever since it's gotten seriously hot. I have to confess I haven't developed a taste for kalamata olives, though. I pick some neutral-ish, small, black ones for the salad, but other than that, I prefer giant green olives.

My favorite Greek thing to make is moussaka. In it, or in parmigiana, or grilled, or fried golden in olive oil, or chopped in cubes and sautéed with tomatoes, eggplants are to me the taste of summer.
 
Mmmmm. Now I want my local greek salad with kalamata olives, feta, greens and lots of lemony dressing. :cattail:
 
There's a place nearby that uses Kalamata olives, along with big chunks of handcut pepperoni, on their pizzas. They're absolutely wonderful.
 
a luncheon salad, al fresco, of Kalamata and feta, followed by a large snifter of Metaxa slowly sipped as one contemplates the accidental passing of events and people along the street...

A pizza made with kalamata olives, Italian sausage, feta cheese and bell pepper is our favorite. BTW, might I suggest that come winter time you mince up some kalamatas and put them into your first stew of the season? You will be amazed . . .
 
Kalamata on pizza is my favorite! With tomatoes. And whole roasted garlic. OMG to die for!
 
When my friends got married in Chicago several years ago it was her Greek family and his Italian family putting the wedding together. Best fucking food I've ever had!
