Imagine if this passage were at the beginning of a story instead of the end...
"Any chance you can leave your husband and you can be that special someone?" he asked.
Melissa shook her head. "Sorry, there's no chance of that happening. Also, this got me thinking we should end this after today, I think it should be over between us."
"I don't like it, but I do understand," he said. "I guess you'll be heading back to your family now."
Rick was expecting her to leave, but she wasn't going anywhere.
"No, you don't understand; I said after today it's over," she said. "I was hoping we could hook up one last time to get it out of our system and then we go our separate ways for good."

What if "Okay, today will be the last time" became a recurring theme for a story?

Then it would be the recurring theme. Actually, I think a lot of affairs operate in this mode. You have this loop which gives the story a nice beat and pace. What I might enjoy as a reader is to have variation for the reason they hook up again and again. The "she could not forget his cock" alone won't cut it for me. But it should be fun creating scenarios when their paths cross and they just have the time for "another one"

It's the beginning of a 'reconciliation at all costs' story.
She got caught and her husband is willing to forgive but she has to break it off.
So she gets her one last fuck. From five different guys, though she's only told her husband about the one.
She's serious about turning over a new leaf, too, so I would make the encounters epic in scale. These are her last flings and she wants to make them count. The last three she takes all at once.
When she gets home from her business trip during which she admited she did all of her cheating, she tells her husband that she broke it off with 'the guy' and will be taking a non-traveling position at work.
Her husband is satisfied, never knowing just what slut she was.
