jam vs jelly

my fruit is small. the seed is big. the skin is thick.

hence cooking it whole with some water, then i will run it through a sieve to get all the unwanted parts out. the problem is i don't know if i can call it a jelly or a jam. a jelly is made by fruit juice. a jam is made from pulpy fruit. i am going to be somewhere in the middle with this batch and am finding myself a bit stuck.

so, jam or jelly?

the fruit: small (golf ball sized) hard stone peaches.

*the farmers told me i should have thinned the fruit early in the spring. 6" between each peach for optimal peach size. i let everything go from blossom to fruit.

In related news, seedless boysenberry jam is not jam; it is an abomination.

I keep seeng tons of prickly pear fruit and have been toying with the idea of making some prickly pear jelly.

The farmers are right. At my first house which had been built in 1964 on a cotton field, I took great pains to dig in four feet of soil amemdments and planted 5 Armstrong Bonanza dwarf peach trees. The peaches are medium sized with freestone pots. It pained me to prune branches, much less cull fruit, but you have to. Your trees will live you for it and reward you with succulent goodness.

yes to the prickly pear jelly! next time i'm out at my parent's place i need to harvest a bunch. i've also heard prickly pears make great margaritas. prickly pear simple syrup. my peaches need to be way cut back. winter garden work to look forward to!

I'm a jam girl.

this is really looking like jam. its making me happy. peach bourbon vanilla jam. i strained a little, then said screw it. we shall see how batch one goes.

Turn and walk away slowly, I'll let ya know. :D

Yeah I have to do something with them this year. I probably have a half gallon of blackberry puree in the freezer that needs to be done. Plus, the new crop is coming in though I'm not going to pick as many this time.

you must live further north than me. my blackberries are finished end of june/ beginning of july. i wish my bushes gave out all summer. blackberry whore!
