When I got married, I had my sister taking pictures (she had just finished some photography classes), but also told all my fried to feel free to take as many picture as they wanted and to give me the films (pre-digital era ...lol).
It took me almost a year to get all the picture developed, printed, screened and put in an album but I am really happy with the result. Just make sure to make a list of the Must Have pictures, like with your family, with the in-laws, you and your girl frieds, you and your uncle/aunt/cousin and so on. And to have enough memory/film/batteries.
And I love your idea of a dark-red dress and to have the wedding outside.
I had so much fun at my wedding that as soon as it was over ... I wanted to get married all over again! LOL
Was hoping to do a 10th anniversary re-wedding in Vegas ... but guess it will be for the 15th or 20th anniversary, as the 10th anniversary has passed us by ...

(I hardly ever do unless for a special occasion....can look a bit washed out when trying on dresses)
Also bring something to pin your hair up so you can see what the dress would look like with hair up or left down.
Some places don't allow this, but try and bring a camera and have someone snap a shot of you in the dress (another reason to wear makeup).
Oh, and try not to have too many people tag along with the shopping....too many conflicting opinions; its yours that matters.
