That looks like it's literally 90% fat. I'm assuming it's just covered in some fat.
 
6 hrs in. Cooking temp- perfect. Moisture- perfect. Starting to darken. Pliability- perfect. Smoke- looks good. Rechaeck at 0200 hrs. :)

Did you really just fantasize about me humping a piece of meat?

It's looking real good. It's in the 170 deg plateau stage, but I've got 8 hrs left to get it up to 207. :)
 
It was dead long ago. Why are you still trying to kill it?
