poplar and sourwood honey= good, strong, sharp, smoky flavor.

I prefer wildflower though.

the poplar ad sourwood sould like they'd be great used as part of a marinade for cooking something delicious!

I use them in barbeque sauce. :D

I like wildflower honey on toast, but my tea has to have sugar or stevia.

There's a honey we got from some place in the wild north/midwest (minnasota? do bees survive there) -- SOME place far distant from here -- that was spectacular stuff, and of course I've never seen it again.

It's amazing that bee barf could be not only so good, but so nuanced and individual. Sort of like that rotting grape juice stuff. ;)

One day, when I have the land to do it, I fully intend to have an orchard and bees. I'm plannign on filling the orchard with wildflower seeds and flowers every year, and having the bees in the orchard. Honey, fruit, flowers- one stop shopping as far as I'm concerned. Of course, the orchard requirements are:

Peaches, pears, plums, apples, and if I can manage it, a couple of various cirtus trees. I have a lemon tree already, but if we move, I won't be able to take it... and hopefully wherever we may go, I can get cherries to grow. I love fruit, so do the kids.

Where I'm moving in a couple of weeks we have apple and cherry trees my parents planted when I was very little, I remember them digging the holes. I want to get into beekeeping, if I can. Making my own honey would be a dream come true.

You should look into it! There are all sorts of resources for it.

People keep bees all around this area. One guy at work is always bringing in honey, and there is a shop in the flea market where we occasionally buy varieties of honey.

*sigh* I do like honey, although my all time favorite is the unrefined, white creamy honey, the "raw" honey. I'll just eat that on a spoon.
