I need to know what the Jamie Oliver style roasties are!!

I saw his method on his Christmas TV series a while back and have adapted it, I tend to experiment a bit.

I think that the main feature of his method is that after peeling and quartering the spuds he boils them up for about 8 mins until the outsides are soft. He then drains the water off and shakes them about a bit to make the outsides fluffy before adding them to the pre heated fat.

I coat the bottom of the roasting dish with virgin olive oil. Add flake salt, black pepper, a touch of mustard powder, a dash of Worcestershire sauce and a generous sprinkling of mixed herbs, stir it all up and put it into the oven a few minutes before the potatoes are ready to be added. It should be sizzling hot when the potatoes are added. I have a Rosemary bush so I take the leaves of a couple of sprigs chop them and sprinkle them on after I have ensured the potatoes are covered in the hot oil. They take about 50 mins to an hour at 160 degC. Perfect.:):)

I always par boil and shake them, but I will try the rest ;)
 
Just been to see a scary film :eek:

This time of day? :eek:.........still here lazing in front of the fire.......junk tv and dogs squeezed beside me on the sofa....in fact I think they think I should be on the floor so they can have the sofa to themselves ;)
