Out and about this morning I went into a local grocery store and was amazed at what I found there. Slabs of dry cured, smoked bacon. Oh just looking at them I was drooling.

Now me being me I stocked up. These were five pound slabs and I bought three of them. (I know, I'm greedy.) When I got them home I immediatly put two of them in heavy weight bags and Vacuum Packed them. These were tossed in the freezer in the back room.

The last one was set on the counter and checked for mold. (A common occurance on dry cured Bacon.) Finding none I pulled out a sharp knife and started cutting it into 1/4 inch thick strips. (That's a lot of strips by the way.)

Tomorrow I'll cook them on the grill over indirect heat and have some great tasting snacks.

I love Bacon.

Can you say tasty?

I can feel my arteries trying to harden even as I look at the plate filled with thick slabs of Bacon. (Did I mention I love Bacon?)

It's a good thing my Cholesterol tends to run low.

Egads! That sounds delicious! I love thick, smoked bacon and country ham too.

One of Elvis' favorite snacks was a pound of bacon skillet fried...washed down with Pepsi Cola. Yum! :D
