ooo.. I made colcannon a few years ago for St. Paddy's Day. I love when it comes around as I make the best Corned Beef recipe using Guinness beer.

thank you! i've never made my own corned beef before. i think i allowed myself to get intimidated by it by thinking that it's complicated when it probably isn't. i bet the leftovers would make amazing reuben sammies.

i just found a recipe for whiskey-glazed corned beef....sounds interesting.
