How do I look at the complete list of a category, or multiple categories, from newest to oldest without a tag or keyword search.
Clicking a category gives me a small list of the most recent, the rest of the options are all alphabetical or tag/keyword search.

Also - It would be helpful if I could use the search while checking all of a multiple categories, but without a specific keyword, but not in alphabetical order. Like searching exhibitionist + incest + sci-fi.

but with one click you have exactly what you want anyway (yes, using tags)
Go to the category of your choice - scroll down and click a corresponding tag from "RELATED TAGS" and you will have
SORT BY: NEWEST & ALL TIME

Or (still using tags)

Just start with https://tags.literotica.com/ - click a "CATEGORY FILTER" first then a corresponding tag

As for your second question - tags do that anyway - you can stack them2022-10-03 21_45_17-Window.jpg

I've wanted the same as the OP myself. Tags should provide this ability; but, there are tons of stories that don't have them, and even more with meaningless/inaccurate/incomplete tags. Thought about suggesting a few site improvements many times, like a function that lets readers add tags to stories that don't have them. Obviously there'd need to be some sort of mechanism to curb adding tags that don't apply to a particular story, preferably with little to no need for admin/moderator approval. Maybe a voting system? Add a tag, other readers upvote or downvote said tag, get enough downvotes and it's automatically removed... something like that.

Whatever, tags are only useful if they're accurate, assuming they're used at all. Plus, there's so many variations for any given tag that it's easy to miss out on a whole slew of good stories. i.e. Sci-Fi/SyFy/SciFi/etc.
