Hiding Veggies?

I am in the same boat as you. I have a 17 month old that will eat fruit til the cows come home but is very picky about veggies. Other posters have mentioned "Deceptively Delicious". I also use a cookbook called "No Whine for Dinner" that incorporates a lot of shredded veggies. Our favorite has been a pasta casserole that has shredded zucchini. You cannot see the zucchini and the flavor blends in with all the other ingredients.
 
Not too much for me to add, but we too have had great success with roasting veggies (asparagus, carrots, parsnips and even brussel sprouts).

It might be a little early for your little one, but getting them involved in planting, cultivating and later harvesting dinner has made my kids from a previous marriage huge veggie eaters, and it worked well on the 3 YO we have now.

Yes! That's the book I was thinking of!
 
For a while, my eldest son refused point-blank to eat vegetables.
Then I discovered that he'd happily filch a few frozen vegetables whenever I had them sitting in a bowl ready to cook.
So, I just put a handful of frozen vegetables on his plate one day. And he ate every single one!
Frozen corn, peas, beans, carrots, broccoli and cauliflower, all went down without a struggle.
He ate frozen veges for about 2 years.
