Hey all you vegetarians

Caramelized onions and pierogies!
Gnocchi and brown butter sauce with sage!

Sorry, I thought of two more things I love to make that is vegetarian, not vegan.

Did you give up on the gnudi?

Gnocchi is fine, but gnudi is better!

A speaking of brown butter, I recently found a brown butter hollandaise sauce recipe that I'll be test driving soon. Looks lip-smacking-plate-licking good.

I would think if you work out a lot you need lots of carbs anyways. Can't beat simple lentils for lots of protein.

That is one of my problems with vegetarian diets I've seen. They are heavy on the carbs -- pastas, rice, bread etc. And, if you work out a lot, it's hard to get protein without a lot of carbs going veggie.

I see the same issues with diets that are not vegetarian.

It comes down to several things:
1- portion size (most folks are sitting down to portions that are way bigger than needed)
2- proportional makeup of peoples plates. We try to have, on average, 50% of our meal veggie or plant based, with the out half roughly equally divided between carbs (potatoes/pasta/brown rice/etc) and protein.
3- the quality of the food. Most people eat a lot of 'empty calorie' foods, foods with plenty of calories but little nutritional value. Fruits, veg, and whole grains are all excellent sources of carbs, but most folks prefer white bread to whole wheat, or the pasta route.

There are plenty of protein rich foods that are not meat. It just requires a little research, and some creativity and learning as to preparing, and incorporating these foods in our meal plans.

We have kids and we've had to sometimes be pretty creative in how we get their daily veg into them, but kids can be a breeze when compared to getting some adults, set in their meat and potato ways, to incorporate more veg and plant based foods into their diets. "Vegetables? Salad? That's food that the food I eat eats!"

I was a vegetarian for seven years until my hair began falling out in clumps. My body could no longer process soy.
Since the body's chemistry changes every seven or so years, I wonder how I would react to vegetarian now. I don't eat a lot of meat. My weakness is bacon, honestly.

Regarding processed foods, as a general guideline we try to purchase the majority of our food groceries from the grocery store perimeter, instead of the aisles.

So basically, the produce section, the dairy, the bulk aisle (nuts, dried beans, grains), and the meat and seafood counters.

Most everything food-wise in the aisles are generally highly processed foods (for shelf-life, cheaper manufacturing, etc), contain a crazy amount of salt and / or sugar, and for the most part, provide little as far as nutrition and quality calories.

There is. Southern stuffed pasta Sardinian, whose name I cannot remember right now, which is carb eating heaven. It is shaped a little like pierogi and stuffed with mashed potato and mint. You serve it either with butter, sage and parmesan or a tomato sauce, I keep th them tomato sauce very light and fresh because... mashed potato in pasta! It's serious comefort food.

Wich I could
Remember the name . Brain freeze. Pretty sure it starts in 'c'. Culurgiones. :)

They sound lovely, so I looked them up. I found this video, which shows them being made (so pretty!), and I think it's rather charming: https://www.youtube.com/watch?v=AjGcUI4CS0E

I can see I may have to have the Canadian come down and be our chef for the weekend Elle, He does most of the cooking when we get together, and he is really good at it.

I don't actually eat that much right now. :). ( I am thinking about bean pasta not eating it;) ) If it's a day G comes and we girls gossip he can always cook Unless the Canadian would like to come too :) I really like cucumber. And raw celery. :) I love pickles :) but give me celery and I am as happy as anything. I am also happy to cook if it helps :) but I am NOT fussy, I just don't eat much. Celery and I am good . :)

Edit; I just read about a 'Kringle' though :)
