Yeah,

image -> adjustments -> desaturate

or:

image -> mode -> greyscale

I've been working on a school project for hours and my printer is not printing properly even though I requested greyscale.

So I'm now changing all the original images to black and white so I can tell my printer to go fuck itself and get the product I needed in the first place.
