Heaven in a Tortilla

The other day one of our local stores had a sale on Skirt Steaks so I picked up a bunch of them. (If made right they are fantastic.)

All but one of them were repcaked in Vacuum Bags and frozen. The last one was dropped into a Ziploc along with some Chimichuri Sauce and a pinch of ground Hot Pepper. (Just enough to give it a hint of a bite.) That was yesterday.

This evening the Skirt Steak was grilled to perfection. About two minutes per side. (Hey Skirt Steaks are thin and when they are marinated in an oil based sauce they tend to cook themselves.)

Once the steak was done it was carried inside and thin sliced.

Now came the Heaven part. Line up about ten thin slices of meat across the center of a warm Tortilla. Sprinkle liberaly with grated Cheese then microwave for about 20 seconds to melt the cheese. Add some shredded Lettuce, roll and enjoy.

Seacat - why do your threads seem to be a depository for these drive-by links of his? :confused:

Sounds good. I'm unfamiliar with chimichuri sauce. You get that at a Hispanic grocer?

Who? Oh him, the little guy in the corner? He's harmless, about like the guy who sits in the back of the theater making fart noises during a movie. I pretty much ignore him.

I can find the sauce in most of my local grocery stores or I just make it. It's easy to make.

Toss in a blender:

1 cup Parsley
1/4 cup fresh Oregano
1/2 cup Olive Oil
1/4 cup Red Wine Vinegar
3-4 cloves Garlic peeled. (I usually up this to 5 cloves but I like Garlic.)
1 Teaspoon+ crushed red pepper flakes (I toss in a couple of Little Birds instead.)
1/2 Teaspoon Cumin
1/4 Teaspoon salt, or to taste
1/2 sharp Onion

Puree.

Thank you so much! It's very similar to the one I looked up, but now I know I have a tried and tested one. :rose:

Latin culture, for some reason, is one I haven't experienced much for some reason, outside of Tex-Mex, but now that I've been taking Spanish this summer, I'm quite fascinated with all things Latin. :)

I'm going to try this next week.

And you can never have too much garlic!
