hard-boiled eggs?

what happens if you cook them too long?

Don't they float to the surface when they're done. If you cook them too long though, the yolk dries out. That I do know.

Wouldn't it have been a lot quicker to google hard boiled eggs? Here are some good instructions. If you overcook them, the outside of the yoke will turn an unappetizing color, and everything will kind of dry out and shrink. So timing to the minute is very important.

Cover the eggs with cold water, and bring to a boil over high heat. Boil for two minutes, turn heat off and cover pan. Let stand for 13 minutes. Cool eggs by running cold water over them in the pan.

If cooked too long, the yolks will have a greenish tint.

1) prick eggs (fat end) with pin or sharp knife to let air escape

2) bring water to hard boil

3) put eggs in with spoon - if you didn't prick them, they will explode.

4) boil for 6 minutes (for large egg.) Immediately remove all eggs from water with spoon. Peel.

This will produce a civilized egg with a fully set white, but a soft runny yolk.

Overboiling will produce sulphurous golfballs. Any tricks involving starting with cold water lower the risk of exploding the egg, but will throw the timing off.

Explode? Can't say I've ever had that happen. Maybe the shell has cracked when it is closed to fully hard-boiled...

Improperly pierced eggs have been known to take out an entire kitchen. KABOOM! Don't play games with eggs. Do it right, or eat corn flakes.

A cracked shell can be avoided by adding a generous dash of salt to the cold water before cooking the eggs.

Eventually the water evaporates from the saucepan, the eggs start to smell a bit unpleasant, then they pop and crack. After a while, the pan, eggs and all, start to melt down -- there may be some flames involved at this point. If you have curtains in your kitchen, they may catch fire. The kitchen will burst into flames, your upstairs neighbors will die of smoke inhalation and you won't have to hear them stomping around up there anymore.
