Hey, that reminds me! I unwittingly cooked roast beef and yorkshire pudding for lunch today. Whoop, I did right and we ate in a celebratory manner. :D

Perdita, they are very simple to make and cook.

Here's a recipie, similar to the one I always use:

Mix 2 eggs, 2 cups of milk, 1 cup of plain flour and a pinch of salt, to taste, into a batter. Allow to stand for 1 hour then remix.

Grease or oil baking tins. Put the tins into the pre-heated oven for a couple of minutes, or until the oil starts to smoke. Pour a depth of 1/2 inch of batter into the tins. Bake for 20 minutes at 450 degrees or until risen and light brown. Serve with gravy.

Or, you can make smaller yorkshires, by using bun tins. Reduce the cooking time accordingly. They key is to have the oil very hot, before you pour in the batter.

Very simple and delcious!
