Got a favorite Italian dish?

Tonight on our menu is baked ziti with mushrooms and meatballs, shrimp scampi and linguine with pesto.

Anybody else??

I don't know if I could pick a favorite, I like so much Italian. I guess if I had to it would be something very simple, just a sauteed broccoli rabe with lots of garlic and penne.

Best meal of my life I ever, ever had was in this little ancient fortified town in Tuscany called Montefiorale. No sign outside, you gotta know someone who knows. You go in, there are maybe six tables, tops. No menu, you just eat what they cooked that day. We had four different pastas, some chicken, some bean stew, some rabbit, some beef. Lots of wine. When the bill came, the cost per head came to somewhere around $30. Fucking amazing.

I have a few favorite Italian dishes.. Really depends on my mood and what I want.. But here goes..

∙ Fettucine Alfredo with grilled chicken breast, scallions, and Portabella mushrooms

∙ Three-cheese Manicotti with vodka marinara sauce

∙ Chicken Marsala served with linguine in a cheese-wine sauce

Sure I do

...and I like Italian food, too, because it's so often served with exquisite wines, such as Gavi and those sangiovese-based nectars of Tuscany.

Can we have some dolce Asti for dessert?

The biggest mistake people make when cooking Italian food is they make these heavy sauces and bury the food in it.

As for what I love, everything from linguini with clams to a rich lasgna with Italian sausage

My father's aunt made great ravioli, on the kitchen table, pressing them closed with a fork. As a kid it was as much fun to watch as to eat. That's over thirty years ago though. . .

Spaghetti bolognese, shrimp scampi on angel hair pasta or a stuffed chicken parmigian with a hearty burgundy.
