I made a ghost pepper sauce for a wedding party. I started with just 4 ounces of sauce for 9 bottles X 6 ounces. So 4 to 50 would be the ratio of pepper mash to other stuff. Usually I go 1:3. The sauce was too spicy hot to eat. I had 4 ounces left so I added it. :D One of the groomsmen decided to drink it out of the bottle. Within seconds his mouth was numb.

That would be a funny prank....putting ghost pepper sauce in a jalapeno pepper sauce bottle. It may also result in a justifiable homicide. :(
 
I was very creative today. I made a new fig/ginger salad dressing based on a PM that GG shared with me.

I also made a green hot sauce made from some jalapeno mash that I made myself from jalapenos and salt. I used that for the hot sauce -- with Gracie's help I was able t make 27 bottles. I think that even GEC would dig the new sauce. It's sweet and spicy and savory. Since jalapenos are lower on the Scoville Scale than cayenne, I think this one might be something most could handle. My sister has an order in for two cases -- and she wants me to make some real hot ones -- so I'm going to order up some habanero mash.

Tomorrow I'm going to create labels for Christmas gifts for red and green hot sauces. I'm going to try and make them super festive.

I make a salsa with chile de arbol. It is the one I get the most requests for. I have a lot of Indian friends and they always want it, and I make it pretty hot. Got to get started soon.
