Friday nights = Appetizer nights

Go with Russian food. The main courses are sometimes dull, but for appetizers I've never found a better nor more plentiful table.
 
Here's an easy one

Take a box of Cherry Tomatoes. Slice off the top and scoop out the inside. (I keep a baby feeding spoon that's perfect for this). Fill the inside with herb-flavored soft cheese (Alouette?).

homemade: basicly just fries smootherd with two or three types of cheezes, and some beacon bits (real beacon).

The easiest solution is to find the Russian general store nearest you and stock up.

Get various smoked fishes sliced thinly. Don't forget the Silotka (smoked fish of some kind) served in thick chunks, covered in raw onions and olive oil.

Cavier is a classic, of course.

Boil some white potatoes and remove the skins, serve with fresh dill and butter on the side.

Salads from end to end, potato, beet, fish, carrot, egg, on and on.

The breads are excellent. Byela (white) breads are especially good with butter chunks spread on them, for dipping in the fish oils and cleaning up your plate.

I'm a fan of stuffed mushrooms

Get 2 dozen large (bell shaped) muchrooms
1/4 sliced green onion
1 clove minced garlic
1/4 butter
1 cup bread crumbs (flavored or unflavored, your choice!)
2 oz. Cheddar Cheese shredded
2 oz. Blue Cheese crumbled

Clean the mushrooms and remove the stems but keep them. You'll nedd to chop the the stems up to make 1 cup.

In a saucepan add the chopped stems, chopped onions, minced garlic, and butter. Heat slowely until tender. Then remove from the heat and mix in the bread crumbs and cheeses.

Spoon the mixture into the mushroom caps and then arrange the stuffed caps on a cookie sheet and bake in an oven (preheated to 425 degrees) for 8 to 10 minutes.
 
Crab Dip Pizza

Get a platter and spread a layer of cream cheese over the whole platter. Lay on some fresh crab meat over the top of the cream cheese. Then pour over the crab meat with cocktail sauce. PLace this next to a bowl of crackers or chips and enjoy!

It's really good!
 
South-of-the-Border Won Ton

1/2 lb. lean ground beef
1 green onion, chopped
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon garlic salt
1/2 cup grated Monterey Jack cheese
2 tablespoons chopped ripe olives
30 to 35 won ton skins or wrappers
Oil for frying
In small skillet, break up beef, cook with onion, salt, chili powder and garlic salt. Stir in grated Monterey Jack cheese and olives. Cool slightly. Place about 1 rounded teaspoon filling in center of each won ton skin. Moisten edges of skin. Fold 2 opposite corners togethre, forming a triangle. Seal edges. Drop into hot oil in fryer. Fry about 1 minute, until crisp and golden. Drain. Serve hot. Good plain or with guacamole sauce.

I have a recipe for home made corn dogs too if you would like it. They are so yummy!
 
I think I could dine quite nicely on a meal made up entirely of glamorilla's various avs. On a stick.
 
Home made Corn Dogs

1 cup flour
2/3 cups cornmeal
2 tablespoons sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
2 tablespoons butter
1 egg, beaten
3/4 cup milk
10 frankfurters
Oil for frying
Mustard and or anything else you like to dip them in if desired

In medium bowl, mix flour, cornmeal, sugar, baking powder and salt. With pastry blender or fork, cut in 2 tablespoons butter until mixture resembles fine crumbs. In small bowl, combine egg and milk. Add to dry mixture, mix well. Pat frankfurter dry with paper towels. Dip franks in batter, being careful to coat all sides. Drop 1 or 2 at a time into hot oil in fryer. Fry until golden, about 1 minute on each side. Insert wooden skewer in end of each. Serve hot.

These are so much better than the pre made ones, let me know if you like them.
