I 🧡 baking and I'm learning to love to cook. I've swapped a few recipes with other Litsters and there is at least one that I consistently seek for help with "What's for dinner?".

Honey-Pineapple Upside-Down Cake

Ingredients
  • 2/3 cup honey
  • 1 (15.25-oz.) can pineapple slices in juice, drained
  • 1 1/3 cups sugar
  • 3/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/4 cup plain yellow cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon table salt
  • 1/2 teaspoon baking soda
  • 3/4 cup buttermilk
  • 3 large eggs

Instructions
  • Preheat oven to 350°. Pour honey into a buttered 10-inch cast-iron skillet, tilting skillet to spread evenly. Top with pineapple.
  • Beat sugar and butter at medium speed with a heavy-duty electric stand mixer until fluffy. Stir in vanilla. Whisk together flour and next 4 ingredients. Whisk together buttermilk and eggs. Add flour mixture to sugar mixture alternately with buttermilk mixture, beginning and ending with flour mixture. Beat just until blended. Spread batter over pineapple.
  • Bake at 350° for 50 minutes or until a wooden pick inserted in center comes out clean, shielding with aluminum foil after 45 minutes to prevent excessive browning, if necessary. Cool in skillet on a wire rack 10 minutes.
  • Invert cake onto a serving platter. Drizzle with Honey Glaze. Let cool 15 minutes before serving.

I enjoy cooking when I have the time. Especially big fan of braising large cuts of meat in wine. This is one of the easier and most satisfying I can share. Sorry I dont have any fancy pictures and I am doing this from memory.

Ingredients
3-4lb rump roast or chuck is fine, 2-3TB regular olive oil(dont be dumb and use extra virgin), salt and pepper, maybe some red pepper flakes if you want some heat, onion, 2 carrots and celery, red wine you like to drink, a bunch of garlic, big can of crushed tomatoes or you can use sauce if that is all you have, box of pasta. I like penne or rigatoni but it does not matter. Some parsley and grated parmesan as well.
Pot Roast with Pasta
Go ahead and pour some wine so you can get drunk and nap while this cooks in oven. Then preheat the oven to 350 degrees. Next heavily season the meat with salt and pepper. While your meat rests go ahead and chop up your vegetables. I always cut mine up in large chunks because they are going to be cooking for hours. Next heat a large Dutch oven on high heat and add your oil. If you dont have a decent dutch oven what is wrong with you? You should go buy one before cooking this meal. Sear the piss and balls out of meat on all sides about 2-3 minutes per each side. Remove meat and lower heat to medium and add the celery, carrots and onions and brown for a few minutes. Add the garlic and cook for 30 seconds stirring constantly. Do not burn the garlic because if you do you’re fucked and everything will be bitter and you might as well go to Olive Garden or Carabas. Add the wine and scrape up all the brown bits and pieces. Throw in the tomatoes as well as a third a can of water. Put meat back in pot and bring to decent simmer. Now is a good time to add some red pepper flakes or even some thyme or other herbs if you have it. Put lid on pot and bake for 3 hours. Remove from oven and let rest while you prepare pasta. When pasta is finished I will usually then chunk or shred meat and serve family style over pasta but whatever the fuck you like is fine. It is a super easy meal unless you are an idiot and I often substitute some ingredients depending what I have. Enjoy.

Thanks. This is the basis for several braised roasts. With a few adjustments you can easily make a more traditional Sunday roast or even Barbacoa for tacos.

O my thank you, my family thinks I'm nuts for liking chicken in my spaghetti.
Your family has never heard of Chicken Cacciatore? Honestly it is one of the few uses for that type of noodle. Speghetti and meatballs is bullshit.

No way. I do like sausage and meatballs in my sunday sauce with macaroni often called penne rigate or rigaton.

There’s a reason that pasta comes in different shapes, and it’s not to accommodate your fork or for some kid to play with. I like spaghetti and clams. I don’t eat spaghetti with meatballs. I like tortellini Bolognese but I like Rigatoni with Carbonara sauce. Marinara sauce is something that I’ll only eat on mussels. I like fusili with garlic and oil.

If I cook spaghetti it’s usually with shredded chicken or seafood or white clam sauce.

Ahh I'm not a big pasta fan. An authentic Italian restaurant (Italian immigrants) makes spaghetti with meatballs here and it's the best I've ever had. You usually only get one or two balls though. They make their own sauce and pasta, so I think that's the big difference.

Who the fuck doesnt make their own sauce? And I think you’re missing the point. Certain pastas were originally made for certain meats. Spaghetti and meatballs traditionally do not pair together.

I guess I am going to have to post my Sunday Sauce or gravy recipe.

I have a lot of work to do here with you folks.

I make my own sauce, but I truly wing it. I look forward to you sharing yours!

It will be such a chore to write out. Maybe I will get drunk and cook this weekend. It takes a lot of time and effort and people will probably fuck it up anyways.

My moms family is from Ohio and I grew up eating Cincinnati Chili originally known as Emperors Chili which is served over spaghetti.

It's also known as a 3 way if they add beans. I love Skyline Chili! Oh I just fork my balls and eat them slowly. I don't cut them up.
