Sweetie dont you know we don't have slavery in the south anymore....... so I will need to think of a new name for it. Hmmmmmmm

Note to LL and a chicken recipe

My dear big kitty, I believe the phrase you were actually looking for was "wined them and dined them". Was it not?;)

Stuffed Chicken Parmigiana a la Expertise.

Its pretty easy and basicly follows the normal Chicken Parmigiana recipe except this one has a cheese and spinach stuffing. I made too much stuffing mixture but to maintain the necessary ratios just follow it.

INGREDIENTS
6 Bonless skinless chicken breasts (thicker is better)
4 Cups of spinach (cut in to bite size pieces)
1 Tub of good quality ricotta cheese
1 Cup of shredded italian cheese blend
1/2 pound of Mozzarella (sliced about 1/8 in thick)
1 cup of grated parmesan (the canned stuff wont work)
3 eggs
3 Tbsp of sweet basil
Bag (3-4 cups) of Italian bread crumbs
1 cup of olive oil
Salt and Pepper
Big jar of tomato sauce (I used my mums that is heavy on mushrooms and garlic and it worked well)


Pre-heat oven to 450

First prepare the stuffing. In a big bowl combine the ricotta, spinach, cheese blend and basil. Stir until well incorporated.

Trim any excess fat from the chicken breasts and cut a slit along one side of the breasts so that it forms as deep a pocket as possible.

Place the bread crumbs in a shallow dish. Beat the three eggs and place them in a seperate shallow dish.

Using a spoon stuff each breast with 2-3 heaping table spoons of the stuffing mixture.

Roll each breast in the "egg wash" until thoroughly coated. Then roll each coated breast in the bread crumbs until it has been completely covered.

In a large skillet pour in olive oil until it is approximately 1/4 inch deep. Heat to a frying temperature. Cook each breast only until brown on each side. It helps to only have a couple breasts in the pan at a time. As each one becomes browned set them aside to drain on paper towels.

Once all the breasts are browned and drained, take a large shallow sided baking dish and cover the bottom of it with the tomato sauce. Arrange the breasts in this pan in such a way that there is at least half an inch seperating them. Place them in the oven for approximately 20 minutes. Check to make sure the sauce is not drying out in the pan and add more as needed. Being careful to place the sauce around, not over the breasts.

When the breasts are almost done remove them from the oven and cover each of them with the sliced mozzarella. Place them back in the oven until the cheese bubbles, then remove.

Sprinkle with a healthy amount of the grated parmesan and serve with pasta or a salad.

Expertise had I known about your night I would have given you my canadian flaming apple recipe with brandy and maple syrop. Makes a great sauce that goes good with ethier the ladies or the Toro sauvion blanc. :p

Two ladies is fine for an inexperienced orgiast, but four bottles of wine between three people is just miserly. I hope you had exotic liqueurs and fine chocolates too!
I hope to see definite signs of improvement before next time!

I thought that amount of wine sufficient. They got Tiramisu and Blue Mountain coffee for desert.

The intent was to have amazing sex, not a liquorfest. Sorry if I disappointed you guess i'll have to invite some "skanky ho's" and get 'em "hot wit' some cognac" next time.

Darowyn...are you caught in a feed back loop big fella? You seem to be repeating yourself.

Any way I am not sure I want to be an orgiast. That has connotations of leisure suits,platform shoes and big ass medallions. Three's company, anything more is a pay per view event.;)
 
Four bottles of wine is not that much sweets. I wouldn't have driven anywhere after, but I was not much more than mildly inebriated.

And even though wine does make some people sleepy there was no way in hell I was gonna' doze off. I have the rest of my life to sleep. I waited for saturday night since my early teens.
