Honey Balsamic Shredded Chicken Sandwiches
Ingredients
1 Pound of chicken breasts
1/2 Cup of water
2 Tablespoons of minced garlic, divided
1 Bay leaf
1 Tablespoon of olive oil
1 Cup of balsamic vinegar
1 Cup of ketchup
1/4 Cup of brown sugar
1/3 Cup of honey
1/2 Cup of finely diced onion
1 Tablespoon of mustard
1 Teaspoon of hot sauce
Salt and pepper
Instructions
Place the chicken, water, garlic, bay leaf, and salt and pepper in the slow cooker and set for 4 hours on low.
Before you shred the chicken heat a tablespoon of olive oil over medium high heat in a medium sauce pan. Add the onion and saute until translucent.
Add the remaining ingredients, vinegar though hot sauce. Bring to boil and reduce heat and boil for 20-25 minutes, or until thick and syrupy.
Shred your chicken and combine the sauce over top.
Place on buns and top with cole slaw.
