That probably depends on the category. I have a couple in SF&F with no sex at all, for instance, and there's a whole Non-Erotic category.

But I suspect readers of the kink-specific categories would be disappointed if a story in Anal didn't feature some anal sex, for instance, or a BDSM story faded to black after the first spank, or Toys & Masturbation only implied a little rubbing.
 
Of course not. We write erotic stories here, not romantasy.

Love to have a medieval pastiche lady protagonist narrating like "Fuck! He's so fucking hot," I think. "I am repelled by yet attracted to his trauma! His strong silence and casual cruelty to other people is making me sooooooo wet!"

It is up to you. If you want to fade to black the gritty details, it is fine as long as you let people know in advance (foreword warning).
If you want to write a zero sex story, there is a category for it.
As mentioned earlier, some categories will not receive well a sex less story.
The level of details is up to you but my experience is that stroker stories tend to be heavy on sexual details and lighter on character developments while longer, slow burn stories has much less sex but way more world and character building.

My advice, for what it is worth, is to write your story and when it is done, see if you should have sex or not in it.

They are called 'erotic stories,' but no, they don't have to be. We have a category called "non-erotic" for a reason! ;) If you are writing a non-erotic sci-fi story, for example, I'd use the tag 'non-erotic' and mention in the forward that there won't be any sex.

There are moments, I just like to leave things to the reader's imagination.
 
Realistically, other than the obvious Non-Erotic category, I believe those where you can get away with non-explicit story include at least:
  • Romance
  • Lesbian Sex
  • Sci-Fi & Fantasy
  • Erotic Horror
I have one in Romance where the most explicit "scene" is half a sentence implying a kiss has happened; it may not be my highest rated story, but it still got the H and I'm usually writing pretty porny stuff.

So yes, you can definitely pull it off in categories which aren't focused primarily on particular sex acts.

Then my advice is just write the stories you want, the way you want.
Make sure they're tagged And categorised correctly, but this goes for any story.

As writers, we're all here for different reasons, but so are our readers. I know that as a reader I'm looking for something different than a lot of people here (judging by what they've said).

My first story here was a 16 chapter story, 116k words. I was really here just to share my ideas and meet like minded people. But I read advice here that you really wanted explicit sex in chapter one so that's what I did. Also, I was testing the waters to understand the site's rules of what was/ wasnt allowed. So this did change some aspects of the story in the early chapters, but also impacted the story as a whole. As a result, I've never been happy with it, it wasn't entirely my story. I've recently removed it. I would like to re-write and repost. Quite possibly the new story will be recieved less favourably, or score lower, but I don't care.

Different writers are here for different reasons, some chasing high scores, some trying to grow as a writer, some with hopes of commercial publishing or at least monetisation. As the reasons for writing differ, so do the recommended actions, if that makes sense

Nope. Emma Agonistes has no explicit sex at all. The FMC refers to having had an enjoyable night with two elf women and leaves the scene as a Lion and a Unicorn begin to have sex. But otherwise no actual sex scenes whatsoever. It’s done pretty well and it’s in my own personal top ten.
 
I have several stories in "non-erotic" and they seem to do OK.
