I haven't seen any discussions in style authorities on this. In print, I'd handle the e-mail dailogue as extracts, indenting it to distinguish it from text. I haven't seen a way to extract in Lit. stories, though.
When I've done it for stories here, I've make the e-mail separate paragraphs, rendered in italics, with each e-mail followed by the e-mailer's name in full caps (and italicized). I submitted them with no extra spaces between the e-mail and the e-mailer's name, but the Lit. system put in an extra return. I think if I submitted a story like this again to Lit., I'd put the sender tag in parenthesis behind the e-mail entry so there was no line skip.
