I'm too lazy to find last years one and we have some new folks to share with...sooooooo

Post your favorite cookie recipes here and we can do a virtual exchange!!! :nana:
 
My stepdad's sister makes these, and I got the recipe from her. To me, they're best if cooked for just a minute or so less than the recipe calls for so that they're chewy instead of crunchy, but to each their own.

Ginger Snaps

2 3/4 cups self-rising flour
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/4 tsp cloves
1 cup brown sugar, packed
3/4 cup butter, softened (you can use margarine, I suppose, but I always use butter)
1 egg
1/4 cup light molasses
sugar (for the tops)

Combine flour, soda, and spices in a bowl and set aside. Cream sugar and margarine. Beat in egg and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 2 hours or more. Preheat oven to 375 degrees.

Shape dough into 3/4-inch balls, roll in granulated sugar, and place on lightly greased baking sheets about 2 inches apart. Flatten each ball with the bottom of a glass dipped in sugar. Bake about 8 to 10 minutes, until set.

Makes about 8 dozen cookies.

I'll have to call my mum (horrors!) and get some good ones from her. Until then, a cookie tip:

For chewier cookies, place in airtight container (or ziplock baggie) with a piece of bread.

Girl, if I made dough one day and tried to tell myself I'd be making cookies the next day, there wouldn't be any dough left.

I am the cookie dough connoisseur.
 
Ginger Parliament Cookies

This is a traditional Irish/Scot cookie.

3-1/2 Cups Flour
1 Tblspoon Ground Ginger
3/4 Teaspoon Ground Allspice
3/4 Teaspoon Ground Cinnimon
1/2 Teaspoon Baking Soda
3/4 Cup plus 2 tablespoons butter (softened)
1/2 cup Dark Molasses
1 Cup packed brown sugar
1 Large Egg

Sift together all the dry ingrediants in a large bowl. In a second bowl mix together the Molasses, butter Brown Sugar and egg. Beat until smooth.

Gradually add the dry ingrediants. Beat until well mixed.

Divide into two equal portions. Wrap each in plastic wrap and refrigerated until cold and firm but not stiff.

Prehead oven to 375. Take one portion out of the refrig at a time and roll out 1/8 inch thick. Cut into rectangles 2-1/2 X 3 inches and bake on greased cookie sheets 6 to 9 minutes. Reroll the trimings as you go being careful not to get too much flour on the cookies. This will make about 50 cookies.
 
I don't eat sweets, although I did have a slice of pecan pie yesterday. (Well, every once in a blue moon I have to have a couple of bites of Phish Food)

I think the last time I even ate a cookie was about 14 months ago. I couldn't even finish it.

Just reading these posts is making me gain 2 pounds.
 
I will break out the cookie recipes later.. right now I need a nap.

Every year I host a huge cookie baking party (or two) and send big tins of cookies with "Merry Christmas" slapped on top, home with everyone. The rest become Christmas gifts for other people (mailmen, neighbors, etc).

Recipe for the perfect Cookie party:

1 large bonfire.
Hibachi grill
1 large pot of soup (turkey noodle, this year) or chili
Music.
Hot dogs and sticks to roast them on
Marshmallows
Buns
Beverages of choice
20 people and lots of cookie/bread/baking supplies.

Start the bonfire, place the soup and beverages in LARGE heatproof containers, and put them on hte Hibachi. Feed people hot dogs, soup, beverages and cookies while driving them to slave away at baking cookies for you. Play music loud, and make people sing and dance with you.

A good time is had by all.

For lazy folks

Brown Sugar Cookies
Ingredients
· 2 cups brown sugar
· 1 cup melted shortening
· 3 eggs
· ¼ cup milk
· 1 tablespoon vanilla
· 1 teaspoon soda
· Flour to mix stiff
Instructions
1. Mix ingredients in order given.
2. Add just enough flour to roll.
3. Cut into shapes as desired.
4. Sprinkle with brown sugar, and bake in a moderate oven (380 degrees F.).

December 16th is this year's date. You can show up from 8a.m. on... but if you plan on drinking, bring a tent... we already have more than full beds around here. :p
 
Cranberry Hootycreeks!

Strange name, yummy cookies. We used the cookies in a jar recipe and gave them out to teachers and family last year. YUM!

INGREDIENTS

* 5/8 cup all-purpose flour
* 1/2 cup rolled oats
* 1/2 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup packed brown sugar
* 1/3 cup white sugar
* 1/2 cup dried cranberries
* 1/2 cup white chocolate chips
* 1/2 cup chopped pecans

(or Metric)

INGREDIENTS

* 80 g all-purpose flour
* 40 g rolled oats
* 60 g all-purpose flour
* 2 g baking soda
* 3 g salt
* 75 g packed brown sugar
* 65 g white sugar
* 60 g dried cranberries
* 90 g white chocolate chips
* 60 g chopped pecans


DIRECTIONS

1. Layer the ingredients in a 1 quart or 1 liter jar, in the order listed.
2. Attach a tag with the following instructions: Cranberry Hootycreeks 1. Preheat oven to 350 degrees F (175 degrees C). Grease a cookie sheet or line with parchment paper. 2. In a medium bowl, beat together 1/2 cup softened butter, 1 egg and 1 teaspoon of vanilla until fluffy. Add the entire jar of ingredients, and mix together by hand until well blended. Drop by heaping spoonfuls onto the prepared baking sheets. 3. Bake for 8 to 10 minutes, or until edges start to brown. Cool on baking sheets, or remove to cool on wire racks.
