Today and tomorrow are baking days...

So far, I'm making chocolate, peanut butter, raspberry, and Irish cream fudge... sugar cookies with the kids, oatmeal raisin and oatmeal butterscothc chip cookies, mincemeat pie, and a birthday cake for Unruly.

I also usually make rum balls, Irish cream balls, and several other pies.

I like to make one new thing each year (the Irish cream fudge was the new one last year)... any suggestions/recipes y'all can share with me?
 
Mexican Wedding Cakes (also known as Russian Tea Cakes) are my favorite holiday cookie. I make them every year. The are basically butter, flour, powdered sugar and finely chopped pecans, finished off with a dusting of powdered sugar when they come out of the oven. :)

I'll get the recipe if you'd like.
 
There is one little thing you can do for me. Give me detailed directions to your house, please.

For gods sake woman, delightful... sexy.... charming woman... don't post them! by the time I get there the only goodie left would be you.

Oh, never mind. That works too.
Can I pretty please at least have the Irish Cream recipe. I have three bottles of the stuff. Not that I mind sipping it straight, but would be fun to try the fudge. If it doesn't 'fudge" right can I dribble it on you and lick it off?
 
Mexican Wedding Cookies

1 pound soft unsalted butter
1 cup powdered sugar
2 tablespoons vanilla
1 teaspoon salt
2 cups finely chopped pecans
5 cups sifted pastry flour
Powdered sugar for dusting

Preheat oven to 350 degrees. Beat butter and powdered sugar in mixer until light and fluffy, about 10-15 minutes. Add vanilla, salt and pecans. Remove from mixer and stir in pastry flour by hand being careful not to overmix. Form into football shapes about the size of small walnuts and place on a buttered cookie sheet. Bake 10-12 minutes or until just beginning to get the slightest bit colored on the bottom. Remove upon the first sign of color and set on a rack to cool. When cool enough to touch place in a bowl with powdered sugar on top and bottom and toss gently. Occasionally toss with sugar while cooling, trying to get as much sugar as possible to stick. When cold, place cookies in airtight container and cover until ready to serve.

Yield: 50 cookies
Prep Time: 30 minutes
Cook Time: 15 minutes

PCG, this recipe is from Foodtv. If you don't have pastry flour on hand, try this one:

1/2 pound butter (if it's salted, just don't add more salt)
2/3 cup powdered sugar
1 teaspoon vanilla
1/2 teaspoon salt
2 cups all purpose flour
1-1/2 cups finely chopped pecans

I roll them into balls - seems easier than football shapes. This recipe called for cooking them at 300 degrees for 25 minutes. That actually seemed to work better because you don't want them browned. Take them out at the first hint of browning on the bottom.

I roll them in the powdered sugar when they are hot and once again when they are completely cooled. The sugar turns to a sort of frosting when they are hot - yum.
 
Mmm now I want to start my baking! I stick with a lot of cookies since the kids love them: chocolate peanut butter chip, chocolate chunk, maybe some tiger bars (butterscotch chip & chocolate...yummy). The big kid wants cinnamon rolls and I'm making raspberry chocolate brownies. I will not share those :D
 
I'm not allowed too much (any) sugar in my diet so I tend to concentrate on entrees instead. HOWEVER, the one dessert that I love to eat too much of and the only one I ever make is date bars. If you want the recipe let me know and I'll dig it out and post it later.

Irish Cream Fudge

What You Need:

Large bowl
2 packages ( each package should be 12 ounces each) of milk chocolate chips
1 (12 ounces) package semisweet chocolate chips
2 jars of marshmallow cream, 7 ounces EACH
2 teaspoons of vanilla extract
2/3 cups of Irish Cream
2 cups of chopped nuts - optional
4 1/2 cups of granulated sugar
1 12 ounce can of evaporated milk
1/2 pound of butter
What You Do:

In a very large bowl, combine the 2 packages of milk chocolate chips, the one package of semisweet chocolate chips, both jars of marshmallow cream, 2 teaspoons of vanilla extract, the Irish Cream, and nuts if you are adding them. Set this mixture aside.
Line a 10-x-15-inch pan with foil and spread lightly with butter or margarine.
In a medium sized saucepan, combine 4 1/2 cups of granulated sugar, 1 can of evaporated milk, and 1/2 pound of butter. Bring to a gentle boil over medium heat and cook slowly, stirring constantly for about 10 minutes.
Pour the milk mixture into the very large bowl holding the chocolate chip mixture. Stir slowly by hand to combine. It is very important to do this by hand and NOT use any kind of mixer.
Pour the fudge into the prepared pan and chill until set.


If it doesn't 'fudge" right can I dribble it on you and lick it off?

OH my god!! My mom makes Russian Tea Cakes every
Christmas!!! Wow.........I never knew that they had
another name!

My mom also makes merengue (sp?) cookies w/
chocolate chips.......also thumbprint cookies....
chocolate chip cookies......

I made chocolate chip cookies for a Christmas party
at work last year....did it the hard way from the recipe
on the bag of Nestle chocolate chips :)

I make these also every year for family and co-workers. They will not leave me alone until I make them, so tomorrow night is baking night. I also make chocolate walnut chip, oatmeal raisin, snickerdoodles, and sugar cookies, fudge, cornflake wreaths and banana bread.
 
I have to make Gingerbread men every year or my grandson gets upset. As a matter of fact he was just asking me this morning when we were going to make them.
Russian Tea Cakes or Mexican Wedding Cakes (regardless of what they are called) are still the best. mmmmm can't wait to make them.
