I have trouble choosing the categories for my stories.

The "rules" I've discovered through search summarize to "pick in the following order:"

1) Gay Male - if there is any interest between two men, the story goes here no matter what else happens in the story
2) Incest/Taboo - If there is any interest between family members, the story goes here unless the family members are two men
3) Non-Consent/Reluctance - If consent is even slightly ambiguous and neither of the preceding categories applies, the story goes here no matter what else happens in the story
4) Erotic Horror - If nothing above applies and there is anything creepy or distressing, the story goes here no matter what else happens (There is potential overlap with BDSM)
5) BDSM - Put the story here if there is any consensual pain, bondage, or humiliation and none of the above apply

Nothing ever fits in "Loving Wives." There is no consensus for the content of the category except that it is ironically named. There is no way to please those fans.

The rest of the categories seem wide open. E.g. Lesbian encounters may occur in any category. Anal may occur in any category even though there is a special Anal category.
First Time, Group Sex, and Interracial can occur in any category even though there are dedicated categories for those.

What goes in Fetish? I didn't find guidance, and the few stories I've read in that category could have been in others. For example, small penis humiliation can often fit in BDSM or Exhibition / Voyeur.

Some of my stories still don't fit the above rules.

Where do I put this: A woman is madly in love with an "Alpha Male," but he maintains a menagerie of woman. She feels inadequate but can't settle for a lesser man.

Where do I put this: An in-orgasmic actress who loves her husband wins the role of a lifetime staring in a sexy made-for-cable mini-series. She "unintentionally" discovers the joy and satisfaction of "simulated" sex on-camera with her co-star. She is ashamed of cheating and ashamed of being unprofessional and knows she will do it again. (Loving Wives? - I'm afraid to dip my toe in there again.)

Where do I put this: A man slowly falls in love with his wife's sister and mutual sexual tension grows, but neither acts until years after his divorce. It's not "incest" exactly. (Erotic Encounter?)

Where do I put a romance between an heiress and a powerful but impotent man? (Romance?, Erotic Encounter?)

Where do I put a story about a man who suffers unrequited love for two lesbians in a committed relationship with each other. The women want children, and they invite him to (platonically) father a child with each of them.

A corollary to the rules, if you can contrive your story to have incest in it and put it in the incest category, you will likely get 3-4 times the number of views/votes/comments.

Again the definition of the categories is a gray area. The readers have made some of their own rules in this regard.

1. Incest/taboo is just "incest" (don't put a nun having sex with a Satanist there, unless they're related).

2. NonCon/Reluctance is another minefield. In theory, any absolute rape should get rejected unless there is a small element of consent.

3. Erotic horror is the gothic, death-metal blaring, pierced and tattooed brother of Non human. If any of the vampires want to fall in love and have pale little Edward Cullen imitations, it goes into NH. If they want to hunt down humans and erotically exsanguinate them, EH is the way to go. DO NOT MIX THESE TWO.

4. BDSM - these guys are surprisingly the most defensive. Every second thing you type is a potential attack on the collar-wielding population. Tread carefully.

5. Loving Wives - Defies logic.

Fetish is for a specific sexual kink which is the focal point of the story. Strapons, feathers, bodily excretions etc. Again, if the participants fit better in another category such as Incest or SciFi, put it there.

Erotic Couplings is a catch-all for smut which won't fit elsewhere. Novels/novellas is a catch-all for longer, plot-driven pieces that won't fit elsewhere.

That's your basic primer on categories. The rest are self explanatory.

Some of my stories still don't fit the above rules.

I'm going to go out on a limb here and say Loving Wives. She loves her husband enough to tolerate, even encourage his infidelity. Just make sure there are large parts of the story from her POV and she gets to have sex atleast once. In a twisted way, it might be well received since the guy gets lots of sex and she doesn't.

Another possibility is Fetish, since it comes under the cuckquean fetish (gender reversed cuckold), but for that I'll have to know does he just cheat on his wife or does he rub her face in her inadequacy and humiliate her directly (or through his lovers).

If not, depending on the length EC or Novels (although you won't get nearly the same number of views).

And you rightly should be afraid. :D

Try Exhibitionist/voyeur - she does have sex on camera for an audience. Just mention heavily on how she feels being on camera.

Where do I put this: A man slowly falls in love with his wife's sister and mutual sexual tension grows, but neither acts until years after his divorce. It's not "incest" exactly. (Erotic Encounter?)

Sister-in-law does count as incest for the purpose of the categories, but Romance could work.

Where do I put a romance between an heiress and a powerful but impotent man? (Romance?, Erotic Encounter?)

You used romance in the description, so I'm guessing it's a longer piece with build-up and non-erotic elements. If so, romance is the way to go.

Where do I put a story about a man who suffers unrequited love for two lesbians in a committed relationship with each other. The women want children, and they invite him to (platonically) father a child with each of them.

Platonically father a child? If it's by artificial insemination, then the story is probably non erotic. Otherwise, lesbian would be good choice if you stress on the relationship between the lesbians and keep the mentions of the penis to a minimum.

That's what I rustled up on a first glance. Hope it helps

Here's my take on where the stories should go...

Where do I put this: A woman is madly in love with an "Alpha Male," but he maintains a menagerie of woman. She feels inadequate but can't settle for a lesser man.
Depends. If he's very alpha--i.e. his menagerie of women are slavish to him and his word is law--then BDSM. If you just mean he's either a man with multiple "wives" or girlfriends (Heftner style)--with the women not slavish just devoted to him, then try "Group" because why have a man with a menagerie of women if it's not going to end up in group sex?
Where do I put this: An in-orgasmic actress who loves her husband wins the role of a lifetime staring in a sexy made-for-cable mini-series. She "unintentionally" discovers the joy and satisfaction of "simulated" sex on-camera with her co-star. She is ashamed of cheating and ashamed of being unprofessional and knows she will do it again. (Loving Wives? - I'm afraid to dip my toe in there again.)
I'm afraid this IS Loving Wives and that's where it should go. That doesn't mean the waters are safe. No matter what you put in there, you get eaten alive. But a cheating wife--and a husband forced to watch her cheat--is pretty close to the definition of a LW story.
Where do I put this: A man slowly falls in love with his wife's sister and mutual sexual tension grows, but neither acts until years after his divorce. It's not "incest" exactly. (Erotic Encounter?)
If the incest writers here say it counts as incest, put it in incest. You'll get more readers and votes. Unless it's very sad-romancy, in which case put it in romance.
Where do I put a romance between an heiress and a powerful but impotent man? (Romance?, Erotic Encounter?)
Erotic encounters are stories that usually have very little story to them. It's "I met someone and we had hot sex" stories. If very romantic, put it in romance. Especially if she somehow brings back his potency. If, on the other hand, she can't do it, but he wants to watch her enjoy herself, and she spends her money on getting guys to pleasure her while he watches--voyeur.
Where do I put a story about a man who suffers unrequited love for two lesbians in a committed relationship with each other. The women want children, and they invite him to (platonically) father a child with each of them.
Probably lesbian.
