I'm never sure how to choose a category for my work and always pick "Erotic Couplings" because it sounds generic. My target audience is always folks over 50 - should I be choosing "Mature?" If there are three people getting it on - even under crazy circumstances, should be choosing "Threesome?" So many choices.

Absolutely, definitely, without question, read this article:

https://literotica.com/s/love-your-readers-categories

This article is the primer on choosing the right category at Literotica.

Target audience has nothing to do with the category. The basic questions should be two:

1. What is the primary erotic kink/fetish/focus of the story? I can't tell from the lack of detail you've given in your post. We need more information.

2. If there is more than one kink/fetish in the story, then you need to choose the one according to the hierarchy described in the article I cited.

Choosing Erotic Couplings as a default is a bad idea, because that category does not have as many readers as some other categories.

Mature is a good, popular category if the story involves an erotic situation between characters of very different ages, where one is a mature person.

If it involves a sexual encounter involving three or more people, you could post it in Group Sex.

But we need more specific information to give you good advice.

I wonder if that article could be a little updated. It's a general good introduction but maybe it could have a second edition.

For instance, it suggests that stories with characters such as "Hermione" would go into Celebrity. I think it was mentioned here at some point that Harry Potter is out of bounds.

There's your answer, right there. I've found Mature to be a good category; the readers care responsive, tolerant. It's where the Lit grown-ups are.
