What I have been doing lately when I get the itch to be a tad creative in the kitchen is go to the Food Network website and poke around for a recipe from one of the show hosts. Then I take the cool parts of the recipe and adapt my ideas accordingly.
Well if anyone else is curious, here is what I did.
I took one huge can of green chiles and sliced them in half, removed the seeds and put them in the bottom of a casserole dish. Only about half of them fit, and I had sprayed the dish with pam. Then I took two chicken breasts and boiled them in a can of chicken stock, and a can of green echalada sauce. Shredded them and put them on top of the chilis. Then I took 3 cups of shredded cheddar, and put that on top of the chicken. I poured on 8 beaten eggs, and put the other half of the sliced chilis on top of that. Then I took some cornflakes and mixed them with 1/2 a stick of melted butter and spread those out on top. It is in the over right now at 400 degrees (f) and after about 15 min. the eggs don't look done yet. It smell so good though, I can't wait! I know I am kind of a nerd to get so exited, but I loooove Chili Rellenos!
