hi everyone. i'm new here and i thought i'd start off by asking what kind of cheese is everyone's favorite. you can tell a lot by what kind of cheese people like. i'm a swiss mouse myself, but sometimes a nice brie hits the spot.

A nice, unpasturized Stilton--quite unique. Hard to find. Against all the rules.

Of course, a sharp Locatelli is the best for a garnish--but I like to eat little chunks.

Canadian Black Diamond is a favourite, too.
