Cheese was alive and well in the 70s as well ... by the 80s it was just better aged. :cool:
 
I do. I like really wicked, cheesy cheese. The kind of cheese that makes you squeeze your eyes shut, pinch the bridge of your nose and go "Fuck! Now that's cheese!"
 
It's OK. Fancy cheeses that cause flavor explosions in your mouth are divine, and I can easily make a meal of one with good french or italian bread, baguettes, etc. Basic Jack cheese makes great cheeseburgers. But I don't like plain-old boring cheeses added to all kinds of dishes in a semi-automatic way, as some people I know tend to do.

But everything is better with some feta cheese sprinkled on it.

Favourites at the moment are Wensleydale with Cranberries, Leidsekaas (which has cumin seeds in it) and Y Fenni, which is Welsh cheese with mustard seeds.

1 lb. soft Kasseri or Kofalotiri cheese
3 tbsp. butter
1/2 lemon (juice)
2 tbsp. brandy

Cut cheese into slices 1/4 inch thick. Place on broiler pan and brush with melted butter. Broil on high 4 to 6 inches from heat until cheese bubbles. Remove from heat. Pour brandy over cheese and ignite immediately.

Sprinkle with lemon juice and serve with bread. Opa!

*drools* I love Saganaki, get it every year when I go to the greek restaurant for easter. It works very good with pita bread, hehe.

On another note my mom calls me a mouse, I think I like cheese, lol.
