One of my favorite creative writing podcasts is Writing Excuses. Even though it is geared towards sci-fi and fantasy writing, It has also helped with my erotica writing. One of the episodes they talk about character sliders.

The examples they use is asking on a sliding scale how Competent, Proactive, and Sympathetic your main character is.

I’ve been applying it to my writing by asking myself how sexually experienced, submissive/ dominate, and comfortable the the characters are in the story.

Along with the characters sexual experience increasing as the story goes on, I also change their submissiveness/ dominance, and level of comfort depending on the build up before the sex scene.

I’ve been trying to think of other things to consider on a sliding scale.

How adventurous they are in bed is another on I think about.
 
Disappointed. I was thinking this was about characters and their appreciation for Krystal/White Castle. My character troupe just spent the last week touring the South, and they managed not to stop at a Krystal.
 
What sort of app or tool do you record this on?
When I make the basic character info sheet, I make a note of it there. You could write the descriptions you are describing, and then numbers 1-10 below it, and mark where they are at the start of the story, and even spots where they start to change in the story.
