ok, i don't want to run the chicken thing into the ground but i did this the other night and thought i'd share...i love combination taste, i.e. sweet and sour, etc.
take a skinless chicken breast and fillet it not quite all the way through...it should open like a book...
spread some chipolte sauce on the side that's facing up...if you don't like really hot stuff put some mild salsa in instead...put in a slice of avocado, a slice of papaya, about a tablespoon or so of shredded coconut...drizzle a little italian dressing on all of that and fold the top over and secure with tooth picks...remember how many...
pour more italian dressing on the top and spread it around evenly and cover with more coconut...let it set for 5 or 10 minutes and the coconut will set to the chicken...
this is best cooked on a bar-b-q pit and if you let it cook about 5-7 minutes per side it will be done and will add that great smokey taste...if you don't have a pit you can broil it and i guess you could even bake it...
with the variety of flavors and the italian dressing you really don't need any other seasonings...
slam two shots of good tequilla while cooking and serve with a fresh salad and the wine of your choice...save a little to rub in your underwear...this stuff's really good..
