Because you haven't bothered to do a search for beer-cheese soup on the web?

I did it with a couple of clicks and found loads of recipes.

In fact, I might try one this weekend. Topping with popcorn just seems like the perfect garnish...
 
hmmm. Never heard of it. Reading some recipes it sounds interesting, especially ones with potato.

Considering I was born in Wisconsin, you would think I would have.

You just have to have cheese from the depths of hell to make it work. I'm farting already.
 
No, I think one can get hold of cheddar most anywhere.

Depths of hell would be like raclette.

I had raclette with a Swiss family. The wife could speak some english and she kept telling me about her husbands agita. Of course he was sitting there eating raw meat and melted cheese at 10 pm and washing it down with grappa.

That gruyere is nasty stuff.
 
I'm a fan of Welsh Rarebit, but I'm not sure about an entire soup of it . . .
 
Und bacon, just because, well, bacon.

I think, instead of adding potatoes, making mashed potatoes, then baking them into a bowl and using the baked mashed potato bowl to serve the soup.

Kinda like using a bread-bowl/trencher, but with baked mashed potatoes.

And yes to the bacon.
