one thing that you probably thought of, but i figured i'd mention anyway, is that if you put the icing into the freezer before icing the cake (to let it thicken a little) be sure to keep an eye on it and/or stir it up from time to time... otherwise it'll get really hard around the sides of the dish and stay loose in the center (naturally).
it won't take long to set up enough to spread but usually when it's first mixed it's too squishy to really work with.
