You did WHAT???? I'll have you know, young lady, it took me about.....um....15 seconds to pull those out of my favourites and send them off to you with tender loving care. Now you tell me you DELETED THEM!!!
Okay, I'll send them again as long as you keep your fingers away from the righthand side of the keyboard when you retrieve them. Promise me now!
 
It reminds me of a house I used to rent in Kirribilli years ago. The view from the lounge room was of the Sydney Heads, another thing I would never tire of seeing. :rose:

PEPPERMINTCRISP'S PERFECT PUMPKIN SOUP:

Slice up one brown onion, one red chilli (take out the seeds if too hot) and a couple of cloves of garlic. Fry them in olive oil, a dash of sesame oil, turmeric and paprika until the onion is nice and golden. Then add approx 1.5 kg of cubed butternut pumpkin.

Stir the pumpkin on high heat for a few minutes, then add 1 litre of Real chicken stock. (Could use vegetable stock if you want) Bring to the boil then simmer for at least 15 mins. Make sure the pumpkin is nice and soft.

Take the soup off the heat, puree the soup (careful, it's hot!) then add a small can of lite coconut milk, and put back on the heat at a gentle simmer.

Then, take off the heat, stir in some cream, and serve with buttered toast. Yum!

Yum!! That sounds delicious!! ;)

Have you tried swapping ginger for the chilli?? :)
